Cocktails: Ramos Gin Fizz

The Ramos is one of my favorite cocktails, partially because it’s always fun to order it with someone who isn’t a cocktail geek, and watch the cavalcade of emotions as they taste it. Most people have never had egg in a cocktail before, or tried orange flower water, or are aware that Gin, like Old Tom, can be sweet. The combination of all those sensations at once, and that ineffable consistency, which feels like a cross between the lightest milkshake you’ve ever experienced and a meringue, already dissolved in your mouth, leaves a startling, polarizing impression. It’s a difficult drink to make, so here’s the recipe and a video of the process.

Ramos Gin Fizz

GLASS- Collins
MIXING METHOD- Shake & Strain

1 ½ oz. Gin
½ oz. Cream
½ oz. Lemon Juice
½ oz. Fresh Lime Juice
1 oz. 2 oz. Soda Water
1 oz. Simple Syrup
1 Egg White
½ Barspoon Orange Flower Water



Ramos Gin Fizz Method (change to)

1. Add ingredients, dry shake for 20 seconds then add four cubes of ice and shake for 3 minutes.
2. Because the volume of the drink will often exceed the volume of the small part of the shaker, it is helpful to wrap a bar towel around the shaker to make sure no excess escapes while shaking, and will also insulate the shaker, which gets VERY cold while you are shaking it.

3. Strain into a collins glass, making sure to get as much foam as possible into the glass (it is possible to get the level of foam well above the rim of the glass)
